Mood Board Monday: Life Lately

Plus a great song and a refreshing mocktail recipe.

Dear Reader,

Happy Monday! And I suppose Happy July is in order too! The last few weeks I have been buried in some much needed organization projects around the house. Plus we’ve just returned from a little family weekend getaway in the country so I’m still in a bit of a regroup state. But I did capture some moments here and there in between those projects before vacation so today’s mood board is a little collage reflecting some sparkles of joy in life lately.

Plus a song that’s been hitting the spot with great vibes and a yummy Cucumber Mint Mocktail recipe that I’ve been enjoying.

MOOD BOARD HIGHLIGHTS:

• Family lunch on the patio after a morning swim.

• Father’s Day patio lunch and barbecue dinner out.

• New wispy flowers (I think a Black Eyed Susan variety?).

• Spontaneous lounging with my boy on a blanket in the grass with a book and snacks.

• Bird watching with my Meadow girl.

• Reading outside during golden hour until dawn.

My Cucumber Mint Refresher Mocktail Recipe:

Add the following ingredients in a lowball glass with ice cubes, stir, and enjoy:

• 1/4 - 1/2 cucumber juice (*blend 2 lg cucumbers in blender with 1 cup of water, strain. refrigerate any extra for a 2nd or 3rd glass.)

• 1 1/2 - 2 oz of non-alcoholic coconut rum or non-alcoholic gin (*of course you can swap out for the real stuff should you so desire.)

• top off with mint sparkling mineral water (*or any sparkling water you prefer.)

• add mint infused simple syrup to taste (*optional)

• garnish with a fresh mint sprig (*optional, I didn’t have any.)
